The idea for my Grilled Vegetable Cheeseless Pizza came from restaurant patrons who wanted lots of great pizza taste, without the cheese. My recipe begins with a hand-stretched sourdough crust made with a savory tomato, basil and garlic sauce. I top it off with an appetizing combination of grilled vegetables, including tender eggplant, Italian zucchini, sweet red bell pepper and a delicate fennel.
